Saumon a l’oseille


Monster wanted me to post a picture of his plate. It looked the same at the end of dinner.

He begged to have a fish all week, and then was not please it when it didn't arrive to his plate like this



Salt and Pepper your Salmon, and cook it on a HOT pan, that has been brushed with olive oil. It cooks fast, so don't walk away. you could have this amazing fish on your plate in under 15 minutes.

the sauce, simple. Melt 1 table spoon butter, and cook 2 shallots until translutant. Add 3 oz of sorrel (watercress will work), and 3 tablespoons of heavy cream, cook until sorrel is wilted.

I chopped mine just in case you are wondering.

So good, I licked the plate.

My risotto took longer. Here is a recipe that you can try, sans wine.

Tomorrow we are having Dinner at friends, see you Sunday.
