21 Days of French Inspired Meals... Starts 2/8/2011

I can hardly believe it has already been 2 weeks of Vegetarian Meals in my home. 14 days of grains, fruits, veggies, not one ounce of meat has touched a skillet. Even though I jumped back and forth on my ideas of when, how long, and to what extent I should make my little experiment be, it has come down to the last leg.

Our Papa has told me he lost 4 pounds, without exercising, in the last two weeks.

I am not sure I should be super proud of this, loosing weight hadn't been a goal. I am afraid to step on the scale myself, I probably gained his four, plus a few of my own.

Genetics SUCK.

But to make sure that I continue with the meal plan, 21 days Vegetarian, here is what you will be seeing in the coming week, not necessarily in this order.

Ratatouille Bake
Rep Pepper Risotto
Risotto alla Milanese
Vegetable Lasagna
Spicy Baked Potatoes
Chevre Souffle
Spinach and Ricotta Conchiglie
Cous Cous Salad
