Goat Cheese Souffle

Keep the house quiet or your souffle will fall.

Which is what mine did.

It fell, into a hole.
That is why there isn't a picture.

I have never had one fall on my watch before.

I totally sympathized with Mandy Moore's Character.

It tasted delicious though.

Goat Cheese Souffle

2tbsp butter
3 tbsp Flour
3/4 Cup Milk
1 bay leaf
ground Nutmeg
Grated parmesan cheese for sprinkling

1 1/2 ounce herb and garlic soft cheese
5 ounces firm goat cheese, diced
6 egg whites
1/4 tsp cream of tartar

salt and pepper

1. Melt Butter in a heavy saucepan, medium heat. Add flour and cook till golden, stirring occasionally. (THINK ROUX)
2. Pour in half of the milk and stir until smooth. Quickly.
3. Add the remaining milk and add the bay leaf. season with salt, plenty of pepper, and nutmeg.

Reduce heat and cover. Simmer for just about 5 minutes, stir occasionaly.

PREHEAT YOUR OVEN NOW, 375 F.

Butter a 5 cup souffle dish and sprinkle with parm cheese.

Remove the sauce from the heat, discard the bay leaf, and stir in goat and soft cheese. Set aside.

In a grease free bowl, whisk egg whites until they become frothy. Add the cream of tartar, increase speed of whisking until soft formed peaks begin to appear, watch and when they are stiff and falling over stop.

Stir in a spoonful of egg into the cheese sauce, then all of the cheese sauce onto the the remaining egg whites. gently fold the mixture with a spatula till it is just combined.

Gently pour souffle mix into dish, and bake 25-30 minutes. NO PEEKING.
See that little girl YELLING in the back. Keep those children away. I am posting this pic, because I was told it didn't fall nearly as bad as I think. BUT I usually have a gorgeous round, puffed, top to my souffle. I am DEVASTATED.


Then To make up for my disastrous dinner, I used the left over yolks to make dessert.


But for this recipe, I didn't have the lemon on orange extract, nor did I have vodka and orange or lemon peel to make a replacement. Instead I opted for adding, cinnamon, cloves, and nutmeg. It made up like a very mild snicker doodle. Then I smothered them in Nutella.



Everything seems better with a chocolate hazelnut frosted cookie.
